Apricot and Turkish Delight Mess

This is an eton mess with a Turkish twist: creamy mascarpone whipped with yogurt and a splash of orange blossom water, then folded with crushed meringue, fresh apricots, and chewy Turkish delight. It comes together in about ten minutes with no cooking at all, which makes it a lovely last minute dessert for two.

Ingredients

  • 1/2 cup (about 3.5 oz) Mascarpone
  • 1/4 cup (about 1.75 oz) Greek yogurt
  • 3 tablespoons Powdered sugar
  • 2 tablespoons Orange blossom water
  • 1, crushed Meringue nest
  • 3, pitted and sliced Apricots
  • 2 pieces, cut into small cubes Turkish delight
  • 3 tablespoons (about 1 oz) Almonds, roughly chopped
  • 4, plus more to garnish Fresh mint leaves

Equipment

  • Large mixing bowl
  • Whisk
  • Cutting board and knife
  • 2 dessert glasses or bowls

Instructions

  1. In a large bowl, whisk together the mascarpone, Greek yogurt, powdered sugar, and orange blossom water until the mixture thickens and holds soft peaks, about 1 to 2 minutes, so it feels light rather than runny.
  2. Gently fold in the crushed meringue, sliced apricots, cubed Turkish delight, chopped almonds, and mint leaves, keeping the swirls loose so you get pockets of fruit and crunch in every bite.
  3. Spoon the mess into 2 dessert glasses or bowls and top with a few extra mint leaves. Serve right away while the meringue still has some crunch.

Tips from the kitchen

  • Fold everything in just before serving. The meringue softens fast once it hits the cream, so timing matters if you want that crunch.
  • Toast the chopped almonds in a dry skillet for a few minutes for a deeper, nuttier flavor.
  • Orange blossom water is strong, so measure carefully. Start with a little less if you have not used it before.

Make it your own

  • Swap the apricots for fresh peaches, raspberries, or strawberries.
  • Use rose water instead of orange blossom water for a more floral note.
  • No mascarpone? Use lightly sweetened whipped heavy cream instead.

Storing & make-ahead

Best eaten immediately. You can whip the cream mixture up to a day ahead and keep it covered in the fridge, then fold in the meringue, fruit, and Turkish delight right before serving so nothing goes soggy.

Good to know

Where do I find Turkish delight?
Look in the candy aisle of larger grocery stores, international markets, or online. Rose or lemon flavored both work well here.
Can I make this without orange blossom water?
Yes. Leave it out, or use a little vanilla extract or a splash of fresh orange juice instead.
Can I use canned apricots?
You can in a pinch. Drain them well and pat dry so they do not water down the cream.
Is this very sweet?
The Turkish delight and meringue bring most of the sweetness, so the powdered sugar is light. Adjust to taste.
